Garden lovage is a vigorously growing perennial plant, producing underground rhizomes, reaching up to 2 m in height. It grows into tall, tufted rosettes made of numerous, erect, long-tailed, single or double basal leaves. Garden lovage grows best in warm, sunny places, although it can also grow in semi-shady and shaded places. Lighter, permeable, well-cultivated and loosened soils with a high content of nutrients, humus and calcium are best for lovage. Lovage will not grow on dry, loose, clay, acidic and barren soils.

The spice parts of lovage are the leaves, rhizomes and roots. The leaves are added to soups, sauces, raw and salads, stews and meat dishes. The root decoction stimulates digestion and has expectorant, carminative and diuretic properties.
